Impact items can be assigned quantities.
To create an impact item that disappears after a donor purchases it, set the item's quantity to 1.
Please note: The item will still be displayed on your donor-facing impact shop page, but donors will no longer be able to donate towards it. To completely hide the item from future donors, you can unpublish it in the dashboard.
